We have always seen vinegar as an essential ingredient - not just as an acid, but as a flavor enhancer with depth, complexity and character.
It has always had a permanent place in our kitchens. Not just one kind, but several. Because just like wine, each vinegar has its own history, its own expression and its special function in food.
When we started looking for a producer we could vouch for, it wasn't enough to just be organic or have good taste. We wanted a real partnership. A producer with roots, with ethics and with an understanding of the demands of gastronomy.
The answer came to us in a rather peculiar way: When Francis Cardenau participated as a judge in the Bocuse d'Or, he asked his colleagues from Team France which vinegars they used in their Michelin-starred kitchens. The answer was almost unanimous - Beaufor.
A producer with more than 100 years of experience, rooted in Champagne, and part of the family-owned Charbonneaux-Brabant, Beaufor carefully selects their ingredients and works with natural fermentation methods that preserve the raw material's original flavor and balance.
This is vinegar at its best - created to elevate dishes without overwhelming them. Together we have put together a series of five vinegars. Each with its own expression, its own strength and its own role in the kitchen. For us, it's not about choosing one vinegar.
