Our white balsamic vinegar is developed for those who want a mild and elegant balsamic vinegar with a natural sweetness and a soft acid structure. It is made from grape juice that is fermented and matured into a light and aromatic vinegar with a pleasant depth, without the dark color known from classic balsamic.
Why choose CARDENAU White Balsamic Vinegar?
White balsamic is the perfect solution when you want the characteristic sweetness of balsamic vinegar but want to preserve the light appearance of your dish. It is less aggressive than regular white wine vinegar and more fruity than the dark version.
- Balsamic elegance: A natural balance between sweetness and acidity.
- Light color: Ideal for light sauces, fish and fresh cheeses like burrata.
- Versatile in the kitchen: Lifts everything from ceviche to complex fruit salads.
- Pure taste: Made using traditional methods without artificial additives.
Use: From burrata to fish and fruit
The white balsamic is perfect for green salads , raw marinated fish, burrata and summery dressings. Since it has a natural round sweetness, it also works wonderfully over fresh berries or in a fruit salad, where the acid provides a counterpoint to the sugar.
We often use it as a substitute for lemon juice when we want a more complex and balanced acidity profile. Mix it with our organic olive oil for a quick and sophisticated vinaigrette that lets the colors of the ingredients shine through.
Taste with attitude in every drop
We chose this white balsamic because it represents the finesse we love in French and Southern European cuisine. It is a staple in ouressentials range because it makes it easy to create gastronomic results in everyday life. Developed with care, chosen with consideration.

Beaufor - Masters of French vinegar craftsmanship since 1908
We have always seen vinegar as an essential ingredient - not just as an acid, but as a flavor enhancer with depth, complexity and character.
It has always had a permanent place in our kitchens. Not just one kind, but several. Because just like wine, each vinegar has its own history, its own expression and its special function in food.
When we started looking for a producer we could vouch for, it wasn't enough to just be organic or have good taste. We wanted a real partnership. A producer with roots, with ethics and with an understanding of the demands of gastronomy.
The answer came to us in a rather peculiar way: When Francis Cardenau participated as a judge in the Bocuse d'Or, he asked his colleagues from Team France which vinegars they used in their Michelin-starred kitchens. The answer was almost unanimous - Beaufor.
A producer with more than 100 years of experience, rooted in Champagne, and part of the family-owned Charbonneaux-Brabant, Beaufor carefully selects their ingredients and works with natural fermentation methods that preserve the raw material's original flavor and balance.
This is vinegar at its best - created to elevate dishes without overwhelming them. Together we have put together a series of five vinegars. Each with its own expression, its own strength and its own role in the kitchen. For us, it's not about choosing one vinegar.
It's about using the right drops at the right time. It's taste with care. From us to your kitchen. -
