The Ultimate Vinaigrette
Classic French vinaigrette built on the golden 1:3 formula. With Chardonnay vinegar, organic olive oil and Dijon mustard you get a perfect balance between acidity, fattiness and emulsion.

Ingredients
- 2 tablespoons Chardonnay vinegar
- 6 tablespoons Organic Extra Virgin Olive Oil
- 1 pinch salt
- 1 pinch pepper
- 1-2 teaspoons Dijon mustard
Procedure

1Add 2 tablespoons vinegar, 1-2 teaspoons mustard, 1 pinch salt and 1 pinch pepper in a bowl.

2Stir until the salt dissolves completely in the mixture.

3Add 6 tablespoons of olive oil in a steady stream while whisking constantly.

4Whisk until the dressing emulsifies and becomes creamy.

5Season with salt and pepper as needed.

6If you want to vary it, you can add half a clove of grated garlic, finely chopped onion, lemon zest, herbs, spices or other things to turn it in different directions.
