Our Champagne-Ardenne vinegar is a tribute to the classic French vinegar tradition. Made from white wine from the famous Champagne-Ardenne region, it gains its characteristic crispness, elegant acidity and clean, clear aroma. It is a vinegar that elevates your dishes with a discreet yet distinctive finesse that is only found in this region.

Why choose CARDENAU Champagne-Ardenne Vinegar?

Champagne vinegar's unique balance of aromatic depth and fresh acidity makes it an indispensable tool in the kitchen. It is lighter and more floral than a traditional white wine vinegar, making it the gourmet chef's choice for fine dining.

  • Authentic origin: Made according to proud traditions in the Champagne-Ardenne region.
  • Crisp acid profile: Provides an elegant counterpoint without dominating the ingredients.
  • Gastronomic versatility: Perfect for everything from French classics to modern seafood dishes.
  • Professional quality: A favorite with both home chefs and professionals for its clean profile.

Use: Beurre Blanc, seafood and fine vinaigrettes

This vinegar is perfect for classic French sauces like Beurre Blanc, where the acidity needs to be precise and clean. It is also the perfect companion for seafood, poultry and raw vegetables , where it preserves the delicacy of the ingredients.

Try it in a vinaigrette with our organic olive oil for a light summer salad, or use it to pickle crispy pickles. It's often found as the "secret ingredient" in our recipes when we want to add balance without heaviness.

A permanent part of the CARDENAU kitchen

We chose this vinegar because it represents the type of quality we love to work with: a blend of finesse, tradition and functionality. It has quickly become an indispensable "essential" in our own cooking. Developed with care and chosen with taste in mind - from our family to your kitchen.

  • Beaufor - Masters of French vinegar craftsmanship since 1908

We have always seen vinegar as an essential ingredient - not just as an acid, but as a flavor enhancer with depth, complexity and character.

It has always had a permanent place in our kitchens. Not just one type, but several. Because just like wine, each vinegar has its own history, its own expression and its special function in food.

When we started looking for a producer we could vouch for, it wasn't enough to just be organic or have good taste. We wanted a real partnership. A producer with roots, with ethics and with an understanding of the demands of gastronomy.

The answer came to us in a rather peculiar way: When Francis Cardenau participated as a judge in the Bocuse d'Or, he asked his colleagues from Team France which vinegars they used in their Michelin-starred kitchens. The answer was almost unanimous - Beaufor.

A producer with more than 100 years of experience, rooted in Champagne, and part of the family-owned Charbonneaux-Brabant, Beaufor carefully selects their ingredients and works with natural fermentation methods that preserve the raw material's original flavor and balance.

This is vinegar at its best - created to elevate dishes without overwhelming them. Together we have put together a series of five vinegars. Each with its own expression, its own strength and its own role in the kitchen. For us, it's not about choosing one vinegar.

It's about using the right drops at the right time. It's taste with care. From us to your kitchen.
