Our Merlot vinegar is created for those who want a red wine vinegar with a soft, fruity character and a balanced acidity that lifts the taste without dominating. The vinegar is made according to traditional methods, where the natural sweetness and fullness of the Merlot grapes are allowed to develop at their own pace. The result is a harmonious and elegant vinegar that works well in both cold and hot cuisine.
Why choose CARDENAU Merlot Red Wine Vinegar?
Where a regular red wine vinegar can often be perceived as sharp, the Merlot grape brings a roundness and a berry-like sweetness that makes it extremely useful in everyday cooking. It is one of the vinegars we use the most in our own home kitchen.
- Fruity fullness: Made from selected Merlot grapes for a deeper flavor profile.
- Balanced acidity: Provides a counterbalance to obesity without "cutting" through the dish.
- Versatility: Ideal for everything from French classics to modern everyday food.
- Gastronomic quality: Mild enough for everyday use, complex enough for gourmet.
Uses: From vinaigrettes to simmering dishes
Merlot vinegar is an indispensable ingredient in a classic French vinaigrette , especially when whisked with our Ancestral olive oil . It also works great as a marinade for lentils, meats and grilled vegetables.
Also try using a few drops as a finishing touch to your stews or sauces. The acidity from the Merlot vinegar helps to "open up" the flavors and provide a beautiful, rounded finish that ties the entire meal together.
Tradition and quality
As with all our raw materials, Merlot vinegar is selected in close collaboration with producers who cherish the craft. By using traditional maturation methods, we ensure a vinegar that has preserved the soul and character of the grape. It is taste with attitude - from our family to your kitchen.

Beaufor - Masters of French vinegar craftsmanship since 1908
We have always seen vinegar as an essential ingredient - not just as an acid, but as a flavor enhancer with depth, complexity and character.
It has always had a permanent place in our kitchens. Not just one kind, but several. Because just like wine, each vinegar has its own history, its own expression and its special function in food.
When we started looking for a producer we could vouch for, it wasn't enough to just be organic or have good taste. We wanted a real partnership. A producer with roots, with ethics and with an understanding of the demands of gastronomy.
The answer came to us in a rather peculiar way: When Francis Cardenau participated as a judge in the Bocuse d'Or, he asked his colleagues from Team France which vinegars they used in their Michelin-starred kitchens. The answer was almost unanimous - Beaufor.
A producer with more than 100 years of experience, rooted in Champagne, and part of the family-owned Charbonneaux-Brabant, Beaufor carefully selects their ingredients and works with natural fermentation methods that preserve the raw material's original flavor and balance.
This is vinegar at its best - created to elevate dishes without overwhelming them. Together we have put together a series of five vinegars. Each with its own expression, its own strength and its own role in the kitchen. For us, it's not about choosing one vinegar.
It's about using the right drops at the right time. It's taste with care. From us to your kitchen. -
